Stacked Red Chile Enchiladas one with w/Beef/Cheese & one w/ Cheese – served with Re-fried Beans

► Red Chile cooked previously and frozen ◄

► Ingredients ◄
Big Bag of Red Chile Pods soaked in hot water till soft and then blended. Cooked with water, garlic, Mexican oregano, salt and pepper for 15 min in the Instant Pot

► Corn Tortillas softened in hot oil.

► Ground beef cooked with onions, garlic, salt and pepper – drain

► Layer in Pan
Red Chile, Tortillas, Meat, Cheese and a little Red Chile. Repeat.

► Baked both in the Air Fryer Oven at 385 for 5 min, swap pans cook for another 7 min. This can also be done in a regular oven. Approx 20 min at 375.
